Whole 30: Day 1

 Overall, this first day went better than expected. For breakfast, I made sweet potato avocado "toast" with an over easy egg and I served it with a side of blueberries. Everyone complained at first about having to eat something savory for breakfast, but most folks liked the meal in its entire form, and 2 kids didn't like the sweet potatoes. 

Since breakfast was more substantial than our usual golden grahams or chocolate cheerios, you guys didn't complain too much for a snack and right before lunch, I sent Dad out with you guys so you your minds were off of being hungry. I whipped up a quick frittata with eggs, a splash of coconut cream, nutritional yeast, bacon, basil, spinach, onion, and tomatoes. I finished off with a little lemon zest and a squeeze of lemon before serving. 
This was the meal I was most nervous about and everyone ate it up happily without any complaints. Hailey even asked for seconds!

I didn't quite make enough so by 2, everyone was hungry for a snack. So, I quickly cut up some bananas and sprinkled on some cacao nibs for crunch and served them with roasted chestnuts. 

For dinner I made everyone's favorite meal, yellow curry chicken. I had to modify it a bit to make it whole 30 compliant, but for the most it tasted very similar to what I usually make. Nathan complained a bit about the dish not having rice, and Hailey refused to even try it and insisted on only having boiled chicken (which I have on hand for Teddy treats) and lots of frozen peas. Eventually, I got her to try a bite and she warmed up to a few more bites of the curry. 

At one point, I thought all things were going to fail when Hailey insisted on having the big bottle ketchup instead of the homemade jar. But after I said that we were out and I had to go to the store to buy more, she was ok with using the stuff that she made and was even licking the plate afterwards.

Other than a few cravings for sweets throughout the day, it's been fairly normal.  

Around 8, I started to feel a bit of a headache. The book talks about the hangover feeling of day 2, but I'm already feeling it tonight. The kids also told me that their head hurts a bit too. 

Tomorrow should be fun. [note the sarcasm]
